BELL PEPPERS – Red Are Even Better

One sweet green bell pepper gives you more vitamin C than an orange. They are a great source of vitamin A and K. Here are the Self Nutrition Data nutrition facts for green bell peppers. Pretty great!

The ones that stay on the plant longer become red bell peppers. And nutrients in those babies really knock it out of the park! Once they turn red, they have eight times the vitamin A, seven times as much beta carotene, 70 times as much beta cryptoxanthin, and 28 times more vitamin C! They also have lycopene which green peppers don’t. To get the most vitamin A, alpha carotene, beta carotene, and beta cryptoxanthin from peppers, eat them with olive oil or another healthy oils.
