Once they turn red, they have eight times the vitamin A, seven times as much beta carotene, 70 times as much beta cryptoxanthin, and 28 times more vitamin C! They also have lycopene which green peppers don’t. To get the most vitamin A, alpha carotene, beta carotene, and beta cryptoxanthin from peppers, eat them with olive oil or another healthy oils.
